This desert of Cinnamon Stewed Peaches with Walnut Crunch takes 15 minutes to make and is so delicious. The soft stewed cinnamon-spciced peach with the hard crunch of the Walnuts is such a satisfying combination.

Ingredients
- 1 Tbsp of Maple Syrup
- 2 Peaches, peeled, pitted and cut into quatres
- 60ml of Water
- 1 Tsp of Cinnamon
- 1 Tsp of Coconut Oil
- 75g of Raw Walnuts- finely chopped
- 1 Tbsp of Maple Syrup
- 35g of Unsweetened Desiccated Coconut Oil
- 1 Tsp of Cinnamon
- 1 Tsp of Coconut Oil
Method
- Preheat the oven to 160 degrees and line a baking tray with baking paper.
- To make the crunch, stir the walnuts, desiccated coconut, coconut oil, maple syrup and cinnamon together in a bowl.
- Spread the mixture over the lined baking tray and bake for 12-15 minutes until golden brown.
- In the meantime, add the maple syrup, cinnamon and the coconut oil to a sauce pan and heat over a medium heat. When it begins to bubble, add the peaches. Toss them in the syrup to coat them and the cook them for 8-10 minutes until the peaches are soft and the sauce is thick.
- Serve the peaches with a handful of the walnuts and a dollop of greek or natural yogurt
