I love indian food and this clean Turkey Tikka Masala Curry is tasty mix of rich creamy flavours with a little (or alot) of spice. It is completely clean, yet it feels too good to be- a perfect friday night alternative to a take away.
Ingredients
- 3 large Turkey Breasts
- 1 Red Onion (Diced)
- 1 Green Pepper (Diced)
- Handful of Green Beans (Halved)
- 2 Cloves of Garlic
- 1 Red Chilli (Diced Finely)
- 2 Tbsp Garma Masala
- 1 Tbsp Tumeric
- 1/2 Small Tin of Tomato Puree (20g)
- 100g of Chopped Tomatoes
- 100g of Coconut Milk
- Salt & Pepper
- Your oil of choice
For the Spice Rub
- 1 Tsp of Tumeric
- 1 Tsp of Garam Masala
- 1 Tsp of Groud Coriander
- 1 Tsp of Ground Cumin
Method
- In a bowl, combine the spice rub with the diced turkey.
- Add oil of your choice to a hot pan and spoon in the diced turkey. Lightly brown the turkey for 5-6 minutes and take off the heat.
- Now cook off the onions, chilli, garlic, green pepper and green beans in a separate pan for 4-5 minutes before stirring in the tumeric and garam masala.
- Once the onions and peppers have softened, add the tomato puree. Then add the turkey in and coat with the paste.
- Stir in the chopped tomatos and allow the mixture to come to the boil.
- Now add in the coconut milk and mix thoroughly. Allow the curry to come to the boil once more.
- Reduce the heat and simmer for 10-15 minutes allowing the sauce to thicken up.
- Serve with a dollop of greek yogurt or a cruchy salad or wild rice (as we have here.
