Beef Teriyaki

This super simple and relentlessly easy Beef Teriyaki recipe is a fantastic way to jazz up a stir fry. We had this for dinner last night and polished off the lot! Teriyaki sauce is normally laden with brown sugar but this recipes secret weapon is honey. Honey brings out the sweetness in sauce but without the processed ingredients.

Ingredients

  • 500g of Steak (Thinly Sliced)
  • Handful of Green Beans
  • 1 Red Onion (Thinly Sliced)
  • Brown Rice
  • 2 Garlic Cloves (Minced)
  • 1 Tbs of Honey
  • 2 Tbs of Grate Ginger
  • 2 Tbs of Water
  • 12 Tbs of Low Sodium Soya Sauce
  • 4 Tbs of Rice Wine Vinegar or Mirin

Method

  1. In a medium pan over high heat, bring water and rice to a boil. Cover with tight fitting lid, lower to a simmer and cook about 45 to 50 minutes or until all water is absorbed. Fluff and let rest 10 minutes.
  2. While rice is cooking, begin to make the teriyaki sauce by combining the soy sauce, vinegar or mirin, honey, water, garlic, and ginger in a small saucepan. Bring to a boil. You can add a Tbs of cornstarch here if you need to thicken the sauce. Boil for 1 minute and turn off the heat.
  3. When rice is nearly done, begin cooking meat and vegetables. In a wok or heavy bottomed pan, over very high heat, place one teaspoon of oil and let it get smoking hot. Add the beef and brown on both sides (about one minute) and remove to a bowl.  Then add green peas and red onions to wok. Toss and cook for about 3-4 minutes until slightly cooked but still a bit crunchy. Now add the cooked beef back into the wok. Stir, keeping heat on high. Stir teriyaki again and add to pan. Remove from heat and toss a few times and serve with fluffy rice.
